Amongst his guests have been the King of Belgium, Former Prime Minister Bob Hawke, and Indonesian President Susilo Bambang Yudhoyono. His work has taken him to Switzerland, London, Austria and many other five-star venues in exotic countries. He is, of course, our Executive Chef, Eddy Kusnaedi.
Eddy was born in Jakarta, Indonesia, the oldest of four children. He was successful in gaining a place at the Swiss Hotel School, a school jointly funded by the Swiss and Indonesian government. Four of the best students were then sent to Switzerland for further training. Eddy was one of those four.
"It was amazing to be able to drink the water from anywhere," Eddy recalls of his journey to Switzerland. "In my country, you get sick if you drink the water without boiling it first, but over there, you could drink from waterfalls, fountains, where ever."
Eddy's favourite herbs are basil and lemon grass, which he uses to enhance his favourite dish, fish of the day. "I like to fish. Fresh fish is the best to cook with. But I prefer to keep it simple."
"I like combining foods and mixing up flavours," says Eddy of his edible art. "But, the presentation needs to be simple, fresh and picture perfect."
Eddy's brother, sisters and parents still live in Indonesia making Hari Raya a rather uncomplicated affair. "I don't think I will return to Indonesia. Australia is home now.
